This Saturday will be the final time when #SaluteOliva will be attending the Bendigo Community Farmers Market. We have been part of this market since the beginning around 12 years ago. Thank you all our loyal customers and friends. It has been an amayzing journey. We will not be completely "disappearing". We are continuing making our organic certified extra virgin olive oil, but no table olives in future. Our products are still available in Bendigo through Edwards Providore and Bendigo Wholefoods. Our website for product orders is very popular and ongoing.
Late October we returned from the Award dinner at the Australian Olive conference in Canberra were Salute Oliva has won the reserve Champion with our mixed olive and the Kalamata Olive on the Australian/International Olive and olive oil competition. Our extra virgin olive oil won a silver medal.
Come and say hello on Saturday at the market and we may have a few special on the day. Grab some award winning olives for your Christmas festivities. They won't be available in a few month time.

Loddon River Flood in Boort
We had some intense days this week at Salute Oliva. It's scary and daunting when you have a big flood approaching and you know your property is located in the rivers flood plains. We had a big flood in 2011. Our olive grove went under water for a few days. Luckily no buildings or infrastructure got damaged. This time the flood was of similar size and again we had a huge amount of support by the local shire and earth moving contractors building temporarily levee banks and installing pumps to cope with the arriving water. Checking banks and fixing leaks by shovel and checking flood levels around the clock kept us busy for a couple of days. It was a big relieve to see the water levels dropping. The trees will survive and we are busy again packing olives and oil which will appear in many Christmas hampers and hopefully make a few people happy and excited tasting our produce. Farming always has some challenges in store, but the rewards are worth all the effort we put in.

Sometimes prices go down without compromising quality and taste! It's rare, but when it's happen, enjoy it. Our 2022 harvest was better than expected, so we are offering the gold medal winning 2021 season premium extra virgin olive oil in the 10lt cask for $100 until sold out. Laboratory test of this oil from late July confirmed a shelf life until late 2024.

With the emergence of micro-breweries our appreciation of beer has changed. People look beyond Lager!
The same is true for Olives!
There is a big difference between mass produced olives and naturally cured olives.
Industrial production uses chemicals to colour and chemicals to de-bitter olives, often leaving olives with an after-taste we now associate as olive flavour.
Naturally cured olives are much more flavoursome, surprisingly fruity and display a nice level of bitterness to finish. A complexity of flavour not dissimilar to craft beers.

Green Sicilian style Manzanillo Olive: (The IPA of Olives)
A firm green, crunchy olive with robust flavours. Herbacious with notes of hops, a light prickliness followed by a distinctive bitterness.
